Freezing meat will make it more solid, and easier to cut into thin strips. This is especially helpful if you are preparing an Oriental dish. Using partially frozen meats, your slicing can be cleaner due to the fibers not stretching and tearing as easy. However, the meat strips should be thawed to assure even cooking.

After you season the meat, do not cook all of the batch. Instead, make a little piece into a patty and cook it first.
